Start here: Five Plant Based Breakfasts

So you're thinking about going 'plant-based' but not sure you want to take the plunge completely. Start with breakfast.

1) Overnight Oats

- 1/3 cup rolled oats

- 1/2 cup plant based milk (unsweetened almond, soy, oat, etc.)

- 1 T flax or chia seed

- Toppings: fruit, nuts, 1 tsp sweetener like maple syrup

Add all ingredients to a jar or bowl, shake or stir and let soak in the fridge overnight.

2) Fruit and Veg Smoothie

- 1 banana

- 1/2 c. berries

- handful of baby spinach

- 1 T flax or chia

- 1/2 cup plant based milk

Blend and enjoy!

3) Avocado White Bean Toast

- 1/3 avocado

- 1/3 cup white beans

- squeeze of lemon

- dash salt and pepper

- Whole wheat bread

Mash all ingredients and toast the bread. Spread mash on toast and enjoy.

4) Almond Butter + Berry Toast

- Almond butter

- Fresh berries

- Hemp seed

- Whole Wheat bread

Toast the bread and top with almond butter, fresh berries and hemp seed. Enjoy with a glass of 'milk'!

5) Cereal

Hear me out. When you didn't plan ahead and have 3 minutes to eat, grab a box of cereal and plant based milk. Bonus points for topping with fruit or flax and chia seed.

Some of my favorite brands are Kashi, Barbara's and Nature's Path. Look for cereals that have more Fiber + Protein than Sugar. As Ina would say, how easy is that??
